In Ayurveda, digestion is both the source of good health and the gateway to illness.  When we eat food that is seasonal, local and appropriate to our dosha, we fuel optimal digestion and vibrant health.  When we eat foods that are imbalanced, impure or improperly combined, our digestive strength becomes compromised and illness can creep in.  Ayurveda provides the tools to understand when, how and what to eat.

when to eat

Digestive strength or agni follows the circadian rhythms set by the sun.

Digestion is strongest when the sun is strongest, from 10am-2pm, so its best to eat your biggest meal during this time. Allow at least 3 hours between meals for optimum digestion. Aim for a light dinner at 2-3 hours before bed. This will ensure strong digestion and energy throughout the day.

how to eat

"A cheeseburger at home is better than kitchari in the car" -Marc Halpern.

How we eat is just as important as what we eat. Eating mindfully, in a relaxed environment allows for proper digestion. When we eat on the go or under stress, our bodies may be in 'fight or flight' mode - making digestion last on the priority list. You should eat only when hungry. Offer thanks for your meal and savor every bite. Stop when 2/3 full. Relax after eating then take a stroll outside, in nature.

what to eat

When we listen to our bodies, we learn to eat intuitively.

The best foods are whole foods, organic when possible, seasonal and freshly prepared. The base of any good diet is cooked and spiced vegetables and grains appropriate to your dosha. The tastes that balance vata are: sweet, salty and sour. For pitta, choose sweet, bitter and astringent. And for kapha, chose bitter, astringent and pungent tastes.
