I love this one pot curry for an easy weeknight meal. It all comes together in about 5 minutes.
You can substitute any veggies that you have on hand.
Ingredients:
2 cups fresh green beans chopped
1 medium sweet potato washed and chopped
optional 1/2 cup red lentils, soaked and rinsed
1/2 cup salsa
1 cup coconut milk (can sub broth or water)
1-2 T ghee or coconut oil
Spices: cumin, coriander, fennel, ginger, turmeric
To make:
in instant pot or large pot, gently toast spices (use about 2 T total) with ghee or coconut oil, just until fragrant.
Add coconut milk, salsa, green beans and lentils if using and stir.
Add sweet potato on top of beans (do not stir).
Cover and pressure cook 5 minutes. Natural release
Add salt and lime to taste.
Serve on its own or over rice or naan bread.
