Ingredients
6 oz. soaked and roasted pumpkin seeds
1 cup dried cranberries
2 Tbsp. ghee or coconut oil
1 - 2 Tbsp. spices [cumin, coriander, fennel, turmeric, ginger, black pepper or cinnamon]
2½ cups toasted cereal - puffed rice or ancient grains flakes
1/4 cup toasted coconut
1/4 cup light brown sugar
pinch himalayan salt
Method:
In a saucepan, bring the ghee to high heat, being careful not to burn.
Add the spices, stir, and remove from the stove.
In a medium-sized mixing bowl, add the remaining ingredients together and mix well with both hands.
When thoroughly combined, pour the spiced ghee over the contents.
Stir well again and serve.
It is best eaten fresh, on the same day it is prepared, but can be stored in an airtight container for longer periods. Enjoy!
